Q: Is this cocoa powder Dutch processed?
A: Hi,
This Fair Trade Organic cocoa has undergone the following process, which is similar to that of a Dutch method, we believe.
After harvesting, the coca fruits are opened for the fresh beans. They are then fermented and during this process, the fruit pulp is reduced. The fermented cocoa beans are dried, cleaned, pre-roased, broken and cleaned again. The cocoa beans are then alcalized by adding calcium carbonates, then roasted and then ground once cooled.
