Many kinds of yeast extract have a high salt content because they’re made with a process called hydrolisation. This uses hydrochloric acid to split yeast cells and sodium hydroxide to neatralise them; creating lots of sodium chloride in the process (salt). Vitam-R yeast extract uses a process that yields a low salt alternative to other yeast brands. Using an autolytic process, the yeast is made using sugar beet molasses and the natural enzymes that occur in the yeast, rather than relying on hydrolisation. This gives Vitam-R yeast extract a much lower salt content and because it is made using molasses instead of grain the yeast extract is also completely gluten free.
