Delicious Alchemy Gluten & Dairy Free Oaty Cookies

Sometimes you just need a gluten free cookie fix, and that’s ok. These gluten & dairy free oat cookies were the easiest to make, preparation took around 15 minutes and then 18 minutes in the oven. You can have delicious cookies in well under an hour!

I added dark chocolate chips to the mix because I love chocolate chip cookies, and I used a dairy free butter alternative so the cookies are suitable for vegans too!

You will need:

1 Bag of Delicious Alchemy Gluten & Dairy Free Oaty Cookie Mix – 200g
75g Unsalted Dairy Free Butter Alternative
30ml Water
100g Dark Chocolate Chips

  1. Preheat the oven to 180C/160C fan and line a large baking tray with greaseproof paper.
  2. Pour the cookie mix into a bowl.
  3. In a pan, melt together the butter (or dairy free alternative) and water. Once melted, add to the cookie mix and mix well with a spatula.
  4. Divide the mixture into 10 pieces, rolling each one into a ball using the palm of your hands. Place onto the lined baking tray and press down until each cookie is round in shape and 5mm thick.
  5. Bake for 16-18 minutes until golden.Leave to cool for 2 minutes on the tray before transferring to a cooling rack to cool completely.

The cookies have gone down a treat in the office today, at the time of writing there are only two left and I can’t see them staying there for very long!
